Poppy cake
Poppy seed cake is a proposition for those who want to bake a gluten-free cake, without lactose for a special occasion. Not everyone is aware that the so-often popping on our Christmas Eve table, in addition to the taste value, it contains numerous pro-health qualities. In the poppy there are large deposits of calcium - building blocks of bones. It is also a rich source of vitamins soluble in fats, vitamins A, C, D, E, as well as copper, manganese, iron, phosphorus and zinc. In addition to health values, it is a great baking with a touch of orange, vanilla and walnuts. The recipe is simple and quick to prepare. In the recipe, we used unrefined coconut oil, which is a great replacement for popular vegetable oils used in baked goods.







Preparation time:
120 min + 35 min baking


1. Poppy cake

Ingredients: 
- blue poppy 525g
- unrefined coconut oil 187g
- honey 225g
- walnuts 225g
- sugar 225g
- eggs (L) 8 items
- freshly grated orange peel

1. Pour mash boiling water, cook on low heat for about 20 minutes. Press on the sieve and then grind twice.
2. Separate the yolks from the proteins. Boil the coconut oil with honey. Still adding grated egg yolks.
3. Finely chop the walnuts and orange peel.
4. Nuts, orange peel and ground poppy seeds add to grated eggs.
5. Whip the whites with sugar into a stiff foam. Then add the whole to the poppy seed mass, gently stirring with a spoon.
6. Spread the mass into three cake dies 24 cm in diameter, lined with baking paper.
7. Bake for about 35 minutes at 180oC.
8. Set aside to cool.

2. Cream

Ingredients: 
- eggs (L) 3 pcs
- unrefined coconut oil 375g
- 300g sugar
- vanilla stick 1 pc

1. Whisk eggs with sugar steamed. Remove from the fire when the mass begins to thicken, continue to whisk to cool. Mix coconut oil with a mixer adding small amounts of egg mass.
2. Put one piece of baked dough into a cream. Repeat the operation with the two remaining pieces.

The top of the cake was poured with melted white chocolate and sprinkled with poppy seeds, and the center itself was decorated with caramelized oranges to emphasize the orange aroma of the cake. Of course, the final look and taste of the cake depends on you, the bitter chocolate and walnuts are equally delicious.
